Roast Sweet Potato With Harissa Yogurt, Herbs and Scallions
Roast sweet potato wedges at 400 degrees (toss with garlic powder, smoked paprika, olive oil, salt, pepper)
2 cups Unsweetened, plain Cashewgurt
A handful of finely chopped mint, cilantro, and two finely sliced scallions
Salt + pepper to taste
Juice of a lime
Serve potatoes with yogurt sauce drizzled on top, with extra herbs and scallions.
