JACKFRUIT FLAUTAS 😍

🫔 INGREDIENTS:⁠
⁠
▪️ 1 yellow onion⁠
▪️ 1 15-oz can jackfruit rinsed, drained and shredded⁠
▪️ 2 tbsp extra virgin olive oil
▪️ ½ tsp garlic powder⁠
▪️ 2 pinches salt⁠
▪️ 1 tsp smoked paprika⁠
▪️ 1 tsp chili powder⁠
▪️ 2 sweet potatoes peeled & cubed small⁠
▪️ 12, 6-inch corn tortillas⁠
▪️ 12 oz Forager Project Sour Cream⁠
▪️ 1/2 cup cilantro leaves and stems⁠
▪️ 2 tbsp lime juice⁠
▪️ 1 pinch chili flakes optional⁠
▪️ ½ tsp pure maple syrup⁠
⁠
👩‍🍳 PREP:⁠
⁠
🔥 Preheat oven to 400 degrees F⁠
⁠
🔥 Add shredded jackfruit, sweet potatoes, onions, a pinch of salt, garlic powder, smoked paprika, chili powder & olive oil into a large skillet.⁠

🔥 Mix well until jackfruit, onions & sweet potatoes are well seasoned. Spread out in a single layer, bake for 10 mins. Flip & bake again for 10 mins.⁠

🔥 Warm corn tortillas for 2-3 mins on a sheet pan in the oven to make them pliable. Do this by placing them onto a sheet pan & spray with olive oil. Once warmed, divide the jackfruit filling into 12 & place 1/12 onto each tortilla. ⁠

🔥 Roll them around the filling & place the open side on the bottom to keep them closed or secure w/ a skewer or toothpick if you prefer.⁠

🔥 Place the 12 filled rolls on a sheet pan, spray w/ oil & bake for 12-15 mins until crispy.⁠

🌿 CILANTRO LIME CREMA:⁠

In a high speed blender combine the @foragerproject Sour Cream, cilantro, lime juice, pinch of salt, optional chili flakes and blend until smooth (makes 12 ounces of crema).⁠

😋 Serve your flautas with beans, and garnish with green onions and lime wedges. Eat the prepared flautas within 3-4 days and reheat in the microwave for about 50 seconds per flauta. Freeze the jackfruit filling for up to 3 months. The cilantro lime crema is good for up to 5 days refrigerated. ENJOY!! ⁠

💥 PRO-TIP: Heating the corn tortillas is KEY! If you forego this step and try to use them from a package directly they will break and crumble. The olive oil sprayer works perfectly to get the oil distributed properly w/o making them greasy. Then, they bake up very crispy without deep frying.⁠
