Combine chopped chocolate and Cashewmilk in a saucepan over medium-high heat, stirring frequently until the chocolate is melted, being careful not to burn the chocolate.
Bring to a low boil, then reduce heat a simmer and add remaining ingredients. Simmer for 5 minutes on low heat, then remove from heat and pour mixture through a fine mesh strainer and directly into a mug.
Top hot chocolate with dairy-free whipped cream and extra chopped chocolate. Enjoy!
