Yogurt made better

These low-sugar vanilla waffles are great for dessert or breakfast.  The Unsweetened Vanilla Bean Cashewmilk Yogurt makes these waffles extra fluffy and gives them plenty of flavor without added sugar.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup almond flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup Forager Project Unsweetened Vanilla Bean Cashewmilk Yogurt
  • 1 ½ cup non-dairy milk of your choice
  • 2 tablespoons coconut sugar
  • 1 tablespoon apple cider vinegar
  • ¼ cup coconut oil, melted
  • Forager Project Unsweetened Vanilla Bean Cashewmilk Yogurt
  • Seasonal fruits of your choice

Prep

  • In a large bowl combine the flour, baking soda, and salt. In a separate bowl, whisk together the yogurt, milk, sugar, and apple cider vinegar. Slowly drizzle the melted coconut oil into the wet ingredients and whisk until well incorporated. Next, combine both mixtures into a smooth batter.
  • Heat the waffle iron and coat with coconut oil or non-stick cooking spray. Add ½ cup batter to the iron and follow the manufacturer’s instructions to determine the right cooking time.
  • Avoid stacking the waffles on top of each other but instead place them on a baking sheet or rack lined with parchment paper. If not serving your waffles immediately, place them in a 200-degree oven to keep them warm.
  • Top with a spoonful of Vanilla Yogurt and seasonal fruits!
