Yogurt made better

This recipes shows how easy it is to make your own gluten-free and low sugar granola.  The recipe make two parfaits but you will have extra granola that can be stored in an airtight container.

Ingredients

  • 1/2 cup chia seeds
  • 2 cup pumpkin seeds
  • 2 cup sunflower seeds
  • 1 cup almonds, chopped
  • 1/2 cup sesame seeds
  • 1/2 cup coconut flakes
  • 1/2 cup agave or maple syrup
  • 1/2 cup brown sugar
  • 1/8 cup coconut oil
  • 1 tsp salt
  • 1 tsp vanilla extract
  • Yogurt partfait:
  • 1 1/2 cup Unsweetened Vanilla Bean Yogurt
  • Granola
  • 1 tbsp Tahini
  • 1 tbsp agave
  • Garnish: fruit of your choice

Prep

  • Preheat the oven to 300 degrees.
  • In a food processor, add the nuts. Quickly pulse 4 times making sure you still retain some large pieces of nuts. In a large mixing bowl, stir together the coconut oil, syrup, sugar, salt, and vanilla extract. Transfer the nuts to the mixing bowl, then add coconut flakes and chia seed. Combine well, then transfer to a large lined baking sheet. Press down evenly into a thin 1/4 inch layer.
  • Bake for 15 minutes. Stir the seeded granola, then bake for an additional 15 minutes. Set aside to cool. Store leftover granola in airtight container.
  • To make your parfait, layer with the super-seed granola, yogurt, a drizzle of tahini and agave, and fruit of your choice.
