Yogurt made better

This quick, easy, healthy Mediterranean Bowl is packed with flavor and drizzled with a creamy tzatziki sauce made with our Unsweetened Plain Cashewmilk Yogurt. It is a great go-to recipe when you are looking for a fresh meal.

Ingredients

  • SAUCE INGREDIENTS:
  • 1 cup Forager Project Unsweetened Plain Cashewmilk Yogurt
  • 1/2 cup grated cucumber
  • 1/2 lemon, juiced
  • 1 teaspoon olive oil
  • 1 1/4 teaspoons dried dill
  • 1/4 teaspoon salt
  • /2 teaspoon garlic powder
  • BOWL INGREDIENTS:
  • 4 cups chopped lettuce
  • 1 cucumber, sliced
  • 1/4 cup kalamata olives
  • 1/3 cup red onion, sliced
  • 1 cup chickpeas
  • 1/2 cup cherry tomatoes, cut in half
  • 1/3 cup hummus

Prep

  • Tzatziki Sauce: In a mixing bowl combine 1 cup Forager Project Unsweetened Plain Cashewmilk Yogurt, 1/3 cup grated cucumber , 1/2 lemon, juiced, 1 teaspoon olive oil, 1 1/4 teaspoons dried dill, 1/4 teaspoon salt, 1/2 teaspoon garlic powder and mix until combined.
  • Bowl Prep: In your main bowl, add the lettuce, cucumber, olives, chickpeas, red onions, cherry tomatoes, and hummus.
  • Lastly, add a generous dollop of tzatziki sauce over the bowl. And enjoy!
