Yogurt made better

Couscous with Cashewmilk Yogurt and fruit is a delicious twist on the classic pairing of yogurt, fruit and granola.  Try swapping out the couscous for oats or quinoa for more fiber and a nuttier-tasting grain.

Ingredients

  • ½ cup instant couscous
  • 1 cup Forager Project Unsweetened Plain Cashewmilk Yogurt
  • ¼ cup almond butter
  • 1 banana
  • ¼ cup fresh pomegranate seeds
  • ¼ cup roasted nuts
  • ¼ cup raisins
  • ½ teaspoon cinnamon

Prep

  • Boil 1 cup of water in a small pot. Add a pinch of salt. Turn off the heat and add ⅓ cup couscous. Let sit covered for 5 minutes. Fluff with a fork and let cool.
  • Layer your ingredients in a bowl or jar, starting with the couscous. Sprinkle with cinnamon and enjoy!
