Prep
- Preheat the oven to 375º F and prep the apples by cutting them in half and trimming off the round ends so they lay flat. Then, use a melon baller to remove the seeds from the center of each apple half.
- Add the apple halves to a baking tray and coat them with lemon juice.
- In a separate bowl, mix together the sugar, brown sugar, melted vegan butter, and cinnamon.
- Coat the apples with the cinnamon sugar mixture. Then, add to the oven to bake for 40-45 minutes until the apples are soft and tender but still hold their shape.
- Remove the cooked apples from the oven and let them cool slightly.
- To serve, fill each baked apple half with a large spoonful of Forager Project Vanilla Bean or Plain yogurt, a handful of granola, and a sprinkle of cinnamon. Enjoy!
