Yogurt made better

Naturally sweetened with dates and blackberry drinkable yogurt, these vegan energy balls are the perfect post workout snack or not too sweet dessert. We recommend topping them with shredded coconut and cocoa powder, but feel free to mix up your toppings and add nuts and hemp or chia seeds. Store them in the refrigerator for up to a week for snack that you can make once and enjoy all week.

Ingredients

  • ½ cup Forager Project Blackberry drinkable yogurt
  • ½ cups rolled oats
  • ⅔ cup raw cashews (or almonds)
  • ⅓ cup pecans (or walnuts)
  • 15 dates, pitted
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ⅛ teaspoon cloves
  • ½ teaspoon salt
  • ¼ cup finely shredded coconut, for garnish
  • ¼ cup cocoa powder, for garnish

Prep

  • Combine all ingredients in a food processor, leaving out the garnishes. Pulse until a choppy dough forms. The mixture should be sticky and cohesive. Transfer the dough to a bowl. 
  • Place the cocoa powder and shredded coconut in two separate bowls. Roll the dough mixture into small bite-sized balls with your hands. Then roll the shaped balls in the cocoa or in the shredded coconut until well-coated. Refrigerate for at least 30 minutes before serving.
  • To store, place in an airtight container in the refrigerator.
