Nachos that are good for you–said no one ever. But with these nachos, now you can! Easy and filling with a black bean protein punch. Topped with vegan The Best Nacho Cheese Sauce, these nachos will soon become your favorite treat.


  • 1 large sweet potato, sliced very thinly into rounds
  • 4 tablespoons canola oil
  • 1 cup cooked black beans
  • salt (for sprinkling)
  • 1 cup The Best Nacho Cheese Sauce
  • additional toppings of choice such as green onion, cilantro, avocado, or your favorite hot sauce


Preheat oven to 450º F and line two baking sheets with parchment paper.

Place sweet potato slices into a large bowl, drizzle with oil, sprinkle nicely with salt, and toss to coat evenly. Bake for about 20 minutes, flipping potatoes and rotating pans once. They’re done when they’ve browned a bit on top and have crispy edges.

Meanwhile, make The Best Nacho Cheese Sauce and keep warm. Top sweet potatoes with black beans, cheese sauce, and add other toppings of choice like avocado, cilantro, and hot sauce.
