These gluten-free and grain-free cereal bars are an easy and delicious on-the-go breakfast of snack.  The crunchy cereal and salty peanut butter are a delicious combination.  Spend ~10 minutes making a batch of these cereal bars and enjoy them all week.


  • 5 cups Forager Project Cinnamon Grain-free Os
  • ¾ cup brown rice syrup*
  • 1 cup peanut butter*
  • ½ cup coconut oil
  • ¼-½ tsp salt, if using unsalted nut butter
  • ¼ cup chopped cranberries
  • ¼ cup cacao nibs


Line an 8×8 pan with parchment paper.

Pour Forager Project Grain-free Os into a food processor and pulse 8-10 times until the Forager Project Grain-free Os are crushed into a mix of small and large pieces.

Melt the brown rice syrup, peanut butter, coconut oil, and salt in a saucepan over low heat for one minute. Stir to combine. Pour the mixture over the Forager Project Grain-free Os and stir until combined. Transfer to the baking pan and gently press down with your hands, making sure the mixture is evenly spread. Sprinkle the cranberries and cacao nibs over the cereal and carefully push them down into the bars.

Refrigerate overnight before slicing them into bars.

* Note: do not substitute the brown rice syrup and peanut butter. The brown rice syrup has the tackiness that keeps the bars together, which other syrups don’t have.
