These No Bake Chocolate Date Bars are quick and easy to make using simple ingredients. Make these bars ahead of time for the perfect snack or dessert. With only 7 ingredients, these bars are vegan, gluten-free, and naturally sweetened with dates.
Prep Time: 20min
Cook Time: 15min
Serving Size: 8 bars
Line a 8 x 6 pan or something similar with parchment paper. The bigger the pan you use the thinner your bars will be.
In a high powered blender or food processor, combine the almond flour, unsalted walnuts, dates, 3 Tbsp of coconut oil, and sea salt. Pulse until the ingredients have turned into a dough like texture.
Transfer the date mixture to the pan. Using a rubber spatula press down the mixture into an even packed layer. Place the pan in the freezer to harden.
Combine the chocolate and 1 tsp of coconut oil in a microwave-safe bowl. Microwave for 30 second intervals stirring between each one until the chocolate has melted.
Pour the chocolate on top of the date layer and spread it evenly. Sprinkle the Forager Project Grain-free Os cereal on top of the chocolate evenly. Pop the pan back in the freezer for 10-15 minutes until the chocolate has slightly hardened.
Cut the No Bake Chocolate Date Bars into 8 squares. After you’ve cut your bars, pop them back in the freezer for 10 minutes until the chocolate layer has completely hardened.
Immediately eat these bars or store them in the refrigerator until you are ready to enjoy them. The chocolate will slowly melt if left out for a long period of time.
