For the Dressing

  • 1 small beet, roasted, peeled, diced
  • 1/4 cup Unsweetened Plain Cashewgurt®
  • 4 cups vegan mayo
  • 1 tablespoon Dijon mustard
  • 1 teaspoon crushed garlic
  • juice of 1 lemon
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • ¼ teaspoon white vinegar
  • 2 tablespoons olive oil
  • ½ teaspoon sea salt
  • ½ teaspoon freshly cracked black pepper
  • 2 heads of romaine hearts
  • hemp seeds and extra freshly cracked pepper for garnish


Blend all of the ingredients for the dressing in a Vitamix or high-powered blender until smooth.

Assemble romaine hearts on plate and top with dressing and hemp hearts. A nice pass with extra chunky, cracked black pepper is always a welcome touch to Caesar salads. Enjoy.
